What I have become, is an expert on appetite, if not on fulfillment. Appetite is the metaphysics of nourishment in the modern age, of mitigating hunger through learned and socially enforced expertise—at best making us science quacks and at worst, fascists—on weight loss, weight gain. Too few of us deal with starvation to understand it may be deeply offensive to complain about food, but I can talk about controlling my appetite all day with no compunction. I can talk about how brilliantly I have controlled the desire to eat you whole. I can talk all day about the leaks in my body when I have had too much to drink. I can talk about managing my appetite, noticing my appetite, observing its declarations and taking wild chances on new ways to nourish myself in the place of tasting every single part of the body through my mouth.
